I stared at the oven, wiping sweat from my forehead. Even with the air conditioning on, it was too dang hot to cook. Merely thinking of preheating the oven made me perspire. It was too late in the day for my slow cooker to save me, and I didn’t have anything ready for the grill either.
With plenty of errands to run, time was a pressing issue. Sandwiches to the rescue!
Of course, the kids don’t always eat the same ones my husband and I do. Sandwiches are so easy to make I don’t mind giving them peanut butter and honey while we try something else. I know my husband gets bored eating the same kind of sandwich too often. We like having a variety of go-to sandwich favorites to use for packed lunches, picnics, and light dinners.
Southwestern Sandwich Recipe

Ingredients:
1 Sandwich roll
4 Turkey ham slices (or deli meat of choice)
½ Tomato, sliced
Lettuce
1 ½ Tbsp southwestern sauce*
Salt and pepper to taste
Directions:
Open your sandwich roll.
Slather the southwestern sauce on your roll and sprinkle some salt and pepper.
Add lettuce and tomato slices.
Roll the turkey ham slices and place them on top of the tomato.
Top the sandwich with the other half of the roll and serve.
*You can buy southwestern sauce at the store or make your own. To make homemade southwestern sauce, mix 1 Cup mayo, 1/4 Cup roasted peppers, Southwestern seasoning, and 1 Tbsp mustard.
Serving Tips:
Want a crunchier sandwich? Try toasting it on a panini press!
Don’t like turkey ham? You can easily make this using slices of turkey, chicken, or ham.
If you are feeling extra indulgent (which I always do), add a slice of cheddar cheese or smoked gouda. Yum!
