When I was little, I remember going to my grandma’s house sometimes for Sunday dinner. At the time, I didn’t appreciate her pot roast. Maybe it’s a kid thing because now I love it! Admittedly, I like comfort foods a little too much, but I’m re-learning how to enjoy them as part of an overall balanced diet and how to lighten some of them up. We rarely get together with extended family for Sunday dinner anymore, but when we do there is lots of delicious food and plenty of conversation.
In my mind, I still equate Sunday dinner with pot roast, but it’s really about getting together with family. Comfort foods still top my list for meal ideas, but my kids don’t like all the same comfort foods that I do. They do love pasta though! So, I created this collection of pasta recipes we could have for our own Sunday dinners at home. From classic chicken alfredo to taco stroganoff, there’s something sure to please everyone.
I’d eat pasta every day if I could, but that doesn’t bode well for my waistline. I make some swaps like using whole wheat pasta and going easy on the sauce, but I am excited about some of the skinny dishes I found like cheeseburger casserole and butternut squash and spinach lasagna. You can tell by my collection that I’m a huge fan of alfredo. I wish it was lighter, but at least I can indulge on occasion!

Oh, I'm totally gonna have to steal this from you! I've been doing this thing where we try a new thing for dinner each week & pasta always goes over really well at my dwelling so I'm gonna have to try some of these. Thanks! :)
