Easy Baked Zucchini Fries With Creamy Garlic Dip

These baked zucchini fries make a tasty side dish. Enjoy them with an easy creamy Greek yogurt garlic dip you can whip up just in minutes. A printable version of this recipe is available below.

A potato side dish is often my go-to, but these oven baked zucchini fries are a fantastic alternative to french fries. I think they’d taste amazing with Honey Garlic Chicken. Yum!

I love oven roasted vegetables. I think it’s the best way to cook them, don’t you?

The oven gives them a nice bit of crunch and the flavor is better, in my opinion. But sometimes I want a little variety in how I cook my zucchini.

If you’ve ever grown zucchini in your garden, you know it can be overwhelming trying to use it all up!

I know one of the biggest concerns is how to keep zucchini from getting soggy when cooking. Zucchini squash has a high water content, so we want to keep our strips thick rather than very thin, and use a fair amount of salt in bread crumb coating.

How to Make Oven Baked Zucchini Fries:

Start by lining 2 baking sheets with parchment paper and preheat your oven to 425 degrees Fahrenheit.

How do you cut your zucchini into strips like French fries? Cutting your zucchini in quarters will make it easier to cut strips.

First you need to cut off the ends of each zucchini. Next cut it in half in the middle. Then cut each of the zucchini halves in half, lengthwise. Finally cut those sections into strips.

Place each strip on the lined baking sheets, keeping them spaced out and not touching.

In a large bowl, mix together the panko, bread crumbs, garlic powder, salt and pepper.

Whisk 4 eggs in a small bowl.

Now for the fun part. Set up a work station with bowl of flour, eggs and then bread crumb mixture, side by side. It’s basically a zucchini fry assembly line.

I try to use one hand for dredging through dry ingredients and the other hand for dipping in wet ingredients. This will minimize the mess a bit (on your hands at least).

You’ll do these next steps with one zucchini strip at a time.

Cover your zucchini fry in flour, then dip into the eggs, and finally put it in the bread crumb mixture and coat generously.

Place the coated zucchini fry back on the lined baking sheet and repeat until all of the zucchini fries are coated for baking.

Put the baking trays in the oven and bake for 15-20 minutes, flipping them over halfway.

When done baking, zucchini fries should be tender and golden brown. After removing from the oven, allow them to cool for about 5 minutes before serving.

To make the dip, mix together all ingredients (Greek yogurt, lemon juice, garlic powder) in a small bowl.

Give your creamy garlic yogurt dip a taste test and add salt and pepper as needed.

This recipe makes about 4 servings, so if you need to make more than that you can prep another batch of zucchini fries while the first one is still baking in the oven.

  • For zucchini fries:
  • 3 zucchinis
  • 1 cup panko bread crumbs
  • 1.5 cup bread crumbs
  • 2 tbsp garlic powder
  • 1 tbsp salt
  • 2 tsp ground black pepper
  • 1 cup all-purpose flour, in a bowl
  • 4 eggs
  • For dip:
  • 1 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Line 2 baking sheets with parchment paper and preheat oven to 425 degrees F.
  2. Cut zucchini into “French fry strips.” To do this, cut off the ends off each zucchini then cut it in half.
  3. Cut zucchini halves in half, lengthwise, then cut into strips.
  4. Place each strip on the lined baking sheets.
  5. In a large bowl, mix together panko, bread crumbs, garlic powder, salt and pepper.
  6. Whisk 4 eggs in a small bowl.
  7. Set up work station with bowl of flour, eggs and then bread crumb mixture, side by side.
  8. Cover zucchini in flour and then dip in the bowl of eggs.
  9. Place into bread crumb mixture and coat generously. Place back on lined baking sheet and repeat for every zucchini fry. 
  10. Bake for 15-20 minutes, flipping them over halfway. Allow to cool for 5 minutes before serving.
  11. To make the dip, mix together all ingredients in a small bowl.
