Gluten Free Italian Pasta Salad
I don’t know about you, but on hot summer days, I don’t like to turn on the oven.
I prefer to enjoy cold dinners, grill, or make slow cooker recipes. Anything to keep the kitchen from heating up the entire house.
It’s so nice to toss dinner together in less than 30 minutes, especially something I know my kids will happily eat.
This gluten free Italian summer pasta salad is delicious with or without chicken. It’s a flavorful side dish when made without chicken.
Making this cold pasta salad with cooked chicken makes it a tasty dinner option.
Dairy and Gluten Free Italian Pasta Salad Recipe Ingredients:
- 12 oz Jovial Fusilli Gluten Free Pasta
- 2 oz Applegate Natural Uncured Genoa Salami
- 3 oz Applegate Natural Uncured Pork & Beef Pepperoni
- 1 cup cooked and cubed chicken
- ½ cup diced red onion
- 1 cup diced sweet mini bell peppers
- 1 cup halved grape tomatoes
- 2 oz Follow Your Heart Parmesan Style Shredded Cheese
- 2 oz sliced ripe black olives
- 8 oz Primal Kitchen Italian Vinaigrette with Avocado Oil
How to Make an Easy Italian Summer Pasta Salad:
First, cook the pasta according to the package instructions. Allow drained noodles to cool.
Next, dice the salami, pepperoni, peppers and onions. Slice the grape tomatoes in half.
Combine all ingredients in a mixing bowl. Pour in the dressing over and toss ingredients to cover in the dressing.
Refrigerate the pasta salad for at least 1 hour and serve cold. The chilling time helps the flavors combine, but if you are pressed for time, you may serve it immediately.
