Sally Inspired Mickey Shaped Rice Crispy Treats
Sally Rice Crispy Treat Ingredients:
- 3 TBSP unsalted butter
- 1 package of large marshmallows (fresh) (Or 4 cups of miniature marshmallows)
- 6 Cups Rice Krispies cereal
Helpful Tools:
- Large saucepan
- Wax paper
- 9×13 inch pan
- Baking spray
- Mickey Mouse Ears cookie cutter
How to Make Rice Krispies Treats
Prep your 9×13 pan by spraying with cooking spray.
Melt butter in a large saucepan on low heat. Once butter is melted, slowly add in the marshmallows. Stir continuously until the marshmallows are completely melted, then remove from heat.
Add rice krispies cereal and stir until all of the cereal is coated with melted marshmallows.
Wet your fingers with water or use wax paper to press the mixture into the pan. Let cool for about 30 minutes.
Carefully remove the sheet of rice krispy treats from the pan.
Spray the Mickey Mouse head cookie cutter with cooking spray and use it to cut out Mickey shaped rice crispy treats. Set them aside and prepare the royal icing to decorate like Sally.
Royal Icing Ingredients
- 3 Tablespoons of Meringue Powder
- 4 Cups confectioners powdered sugar
- 5 Tablespoons of warm water
- 1 tsp pure almond extract
- 2 piping bags with number 2 decorating tip
- 1 squeeze bottle
- Teal and Black gel food coloring
How to Make Royal Icing
Using a stand mixer, beat the meringue powder, powdered sugar, water and almond extract until combined. The icing should be smooth and stiff with peaks. This will take about 7 minutes on low speed.
Scoop 1/2 cup of the royal icing into a bowl and mix in a few drops of the black gel food coloring. This will be for the creating the stitches.
Mix in a few drops of the teal food coloring and mix until combined.
Scoop the black icing into 1 piping bag and scoop some teal icing into the second piping bag.
Mix about 3 teaspoons (adding only 1 at a time) of water into the remaining teal icing and pour it into the squeeze bottle. This will help thin the icing to flood the top of the rice crispy treats.
How to Decorate Mickey Shaped Sally Rice Crispy Treats
Now it’s time to decorate them! Line up the Mickey ear crispy treats on a waxed paper lined counter.
Start by outlining the teal icing using the piping bag. Set aside and outline the next one. It needs a few minutes to dry, so it should be enough time after outlining all of them.
Once the outline has dried, you can fill in the center. The dried outline will help create a border for the icing.
Use the squeeze bottle (or another piping bag) with the teal icing that was mixed with a little bit of water.
Carefully squeeze and flood the royal icing in the center of the Mickey head. Gently spread the icing around using the tip and gently tilt or shake your treat to get all of the top covered.
Set the rice crispy treats aside so the royal icing can set before adding the final touches.
With the black icing, pipe several lines across the crispy treat. Think of Sally and don’t make them all in the same direction. Add the lines to all of them before finishing the stitches. Giving the initial lines time to dry a little will keep them from smearing.
Finally, work on one line at a time to add small lines across as well as some criss-cross ones. They will look like stitches when you are done. Allow time to dry before packaging them up.
